Doesn’t look like much, but trust me. This salsa I just made is incredible. And the last one I’ll make in Mexico for a while. ::sob!::
This is what I’ll miss about fruits and vegetables you can buy in Mexico: 1. They are extremely affordable, 2. They don’t have stickers covering every surface of them, and 3. They actually taste like something.

Yep. It’s a pretty idyllic life we are leading right now. Lindsay reminded me that I was actually worried that I’d be bored during this trip. Boy can I be ridiculous sometimes!
Also: starfruit!
We’ve been suuuuuuper lazy in Puerto Vallarta, so there’s not much to write home about… unless people want to hear about sleeping, cooking, loading the dishwasher, playing cards, reading, watching movies, making margaritas, smearing sunscreen on our skin (we’re still as pasty white as when we left), walking to the corner to get coffee, lamenting the ten pounds we each have surely gained in the last two weeks. See? Boring. But absolutely lovely.
We’ll be home in two days….. something that makes me both happy and sad. Happy because I miss my friends and family and dogs, and sad because I don’t want these beautiful and lazy days to ever end. As I type this, I’m looking out at the ocean from the balcony. The salty breeze slightly singes my nostrils (in a good way.) Palm fronds dance. Birds zip across the sky, seemingly chirping, “Wheeeeeee! Aren’t we SO lucky to get to spread our wings over this paradise?” (The answer is “yes.”)
My gaze across the sea isn’t the dreamy, far away sort—it’s the intense, searching sort, in hopes a dolphin or a whale will pierce the surface of the water. Just once, please? O Mighty Neptune, grant me one single solitary dolphin? Please? Or at least a marlin? No? How about a seabass? Nothing? C’mon. A seahorse? Fine, suit yourself, you hoarder.
Maybe tomorrow, when Matt and I go on the whale watching tour, I’ll see SOMETHING. If not, I’m going to be pretty upset, to be honest. I wonder if they give refunds…
Matt’s been cooking up a storm. We found a lovely mercado with the freshest fruits and vegetables e-ver—-YUM. Matt gets depressed thinking about going home to the “month-old fruit and vegetable selection in Chicago.” Ha ha. It IS good here, though, especially the poblano peppers and tomatoes. I’ve been eating a lot of starfruit because it’s hard to get back at home and because I GET TO EAT LITTLE STARS. Duh.
